Jess has burst onto the food scene showing a fresh insight into the world of meat. While cutting her teeth training as a butcher, Jess promotes conscious eating while using offal and offcuts. Best loved for her handmade sausages and championing Irish produce, she pulls back the curtain and shows the importance of local butcher shops and their place in the community.
