Dublin born chef, Mark O’ Brien has spent the last ten years working his way through some of the best restaurants in London. Stints at Barbecoa, The Dairy, and Birch (Zebra Riding Club) have all given him a grounding in modern cooking and live fire. He now is leading the kitchen at Samphire in Whitstable.
Ben
Ben Quinn is the founder of Woodfired Canteen. Ben and his team travel Europe laying long tables in beautiful locations, feeding 100s of guests, cooking over fire and serving to the centre of the table. Ben is based in Cornwall UK but was born in Co Donegal. His early memories of food are the huge pots it took to feed him and his 7 siblings! Its these memories and the feeling of eating together, that fuel is passion for doing hospitality in a different way. Ben has self published his first book- Good Value, Good Values, spoken for TED and fed 45,000 NHS staff during the pandemic.
