Hawksmoor
Hawksmoor started in 2006, when two childhood friends, Will Beckett and Huw Gott opened a restaurant serving steaks from traditionally-reared cattle and sustainably sourced seafood, alongside old-school cocktails in a then-unfashionable part of London and changed steakhouse standards in that city.
Since then, Hawksmoor has ranked Number 1 in the ‘World’s Best Steak Restaurants’ list and grown to a 11-restaurant group, including one of the most recent, a wildly successful launch in New York, hailed as “the hottest steakhouse in New York” (Eater). With a focus on sustainability, charity and local sourcing, Will and Huw’s obsession with quality and ethics has led Hawksmoor to be ranked amongst the best companies to work for by Best Companies for 12 years in a row, given the highest 3* rating for sustainability by the Sustainable Restaurants Association, achieve carbon neutral status and, most recently, achieve B Corp accreditation – a global kite mark for businesses with the highest ethical standards.
Cocktails at Hawksmoor are deceptively simple-seeming drinks that belie the hours of painstaking research, travel, tastings and technique that Liam Davy (group’s Head of Bars) and the full team of bartenders have put into them. It’s a process that allows us to bring out the best of Hawksmoor talent, commitment to sustainable quality ingredients and unwavering urge to do better to the fore – from infusing wine, finding ways to bring drinks to freezing point and discovering the best distillers that will do the vision justice (and vice versa). From sub-zero martinis (hailed “the coldest in New York”) to an homage to the Second Golden Age (the era that resurrected the craft of the cocktail to our unwavering classics) and the Sacred Six - timeless Hawksmoor classics that will always be on our menu – all to help the decadent you kick back and celebrate life with friends and family.
Liam Davy is the Head of Bars for Hawksmoor in the UK, Ireland and the US. During his 20 years in hospitality, Liam has worked in cocktails, as Group Head Bartender for the legendary Match Group and as a wine buyer & sommelier at Soho's Quo Vadis. Since re-joining Hawksmoor in 2019 as Head of Bars, Liam lead openings in New York, Liverpool, The Lowback (the stand-alone bar) and has achieved the coveted Spirited Award for World's Best restaurant Bar at Tales of the Cocktail in New Orleans and The Sunday Times Best Companies Innovation Award for the group’s new cocktail list.
Alex McGettigan is the General Manager of the soon-to-be Hawksmoor Dublin. Having been born in Bray, Co. Wicklow to Dubliner parents, Alex spent much of his life in UK, eleven of those were with Hawksmoor, most recently managing the Seven Dials restaurant in London.
Hawksmoor Dublin is due to open very soon. In the meantime, they will be popping up serving cocktails at one of the Me Auld Flower festival bars.
